Pares Balta Cósmic 2022.

The Cosmos as an entity with influence on the vegetative cycle of the vine and its natural environment, biodynamics and the lunar cycles linked to agriculture, ground quartz silica as an active agent in the health of the terroir and the elongated, cyclical and imperishable shadow of the Austrian philosopher Rudolf Steiner, sowing, harvesting and constellations. Gómez Cruzado El Predilecto 2021.

  Sauver le nom d'une référence perdue dans le coffre à souvenirs d'une cave historique du Barrio de la Estación à Haro, comme Gómez Cruzado, c'est, en principe, rendre hommage au passé, construire le présent et allumer l'aiguille de l'avenir. El Predilecto concentre avec sa propre lumière la nostalgie qui, comme l'a dit la grande Chavela Vargas dans l'une de ses coplas : "On revient toujours aux anciens lieux où l'on a aimé la vie". Il s'agit d'un assemblage de Garnacha et de Tempranillo dans des récipients en béton, le premier provenant de vignobles de l'Alto Najerilla, le second de la municipalité de Samaniego. Sols de composition calcaire et d'argile ferreuse. La récolte donne lieu à un processus de vinification réalisé indépendamment pour chaque cépage, avec égrappage, sans foulage et fermentation alcoolique à froid à l'aide de levures indigènes et d'une brève macération.  Assemblage et stockage dans des cuves en bé

Famille Todeschini Château La Brande Le Marmot de La Brande 2018.

  La famille Todeschini est une référence en matière de travail efficace et convaincant dans le domaine de la viticulture. Yann Todeschini, Karl, Jean Guy et Anne Marie, diplômée en pharmacie, forment un groupe bien établi. Leur domaine Famille Todeschini - Château Mangot & Château La Brande, à Bordeaux, est plus qu'un choix identifié à la qualité. Aujourd'hui, j'ai débouché une bouteille de l'édition millésimée 2018 de leur Le Marmot La Brande, un vin rouge basé sur un assemblage variétal de merlot et de cabernet franc, élaboré avec des raisins issus de l'agriculture biologique, en conversion vers la biodynamie. Une référence douche aux fruits, qui accrédite l'intervention minimale, le nudisme de la vinification, la production en cuves inox, l'utilisation de levures indigènes et l'absence d'enzymes et de soufre. Adega Catro Ferrados Blanco Sobre Lías 2022.

Huguet de Can Feixes Negre Tradició 2015.

This Spanish red wine is a blend of Tempranillo, Merlot, Cabernet Sauvignon and Petit Verdot that I tasted in the 2015 vintage edition of Can Feixes Negre Tradició, recently arrived from this Catalan winery that belongs to the Penedés appellation of origin. The grapes were harvested by hand, selected by hand in the vineyard and then brought to the cellar. Destemming, fermentation and maceration in stainless steel tanks, followed by a year of maturation in oak barrels, mostly French and to a lesser extent, American, of two hundred and twenty-five litres and a final refinement in the bottle, before being put on the market. Bodegas Luberri Monje Amestoy Maceración Carbónica 2023.

There are many icons to boast about in La Rioja. One is the carbonic maceration wines. Another is the marvellous peppers stuffed with meat, sweet or spicy, there are no colours or flavours to suit all tastes. Today I have decided to pair a wine of this category with an example of this traditional delicacy, an artisan work of my trusted butcher, Emilio, located in the Rioja town of Haro. Technically speaking, the carbonic maceration process involves the change from a respiratory metabolism to a fermentative metabolism when the grapes are placed in an atmosphere extremely poor in oxygen and enriched with carbon dioxide.
